Southwest Chicken Rub

This easy rub can be used for so many things, quick and easy southwest chicken!

Ingredients

2 Tablespoons Olive oil

1 Clove garlic, pressed

1 tsp ground cumin

1 tsp chili powder

1 tsp dried oregano leaves

1/2 tsp salt

1 pound skinless boneless chicken breast halves or thighs

 

Directions

Combine oil, garlic, cumin, chili powder, oregano and salt.

Brush over both sides of the chicken till coated.

Grill or cook on stove top medium in the ninja.

8-10 minutes until chicken is no longer pink, flip once during the cooking time.

Serve immediately
Great in a taco salad, or burritos, traditional salad or just by itself!

    Nice. I use a similar rub (but with more ingredients than this) to make my Ninja “rotisserie” chicken. Take out giblets from whole chicken, remove fat globs, tie up chicken (or not). Season inside and out with 1/4 cup rub. Brown all sides on stovetop high for 15 minutes. Remove chicken and reduce temp to 350°. Add four cups liquid (water, part beer or wine or fruit juice if desired), place chicken on rack and return to oven. Cover and roast for an hour and fifteen minutes. Remove from oven and let rest, covered for a few minutes. Any leftovers can be boned and shredded or chunked, and used in salads or tacos or whatever.
