Breakfast Casserole

Ingredients

(3) medium potatoes
Olive Oil
1 pound Breakfast Sausage
1 dozen eggs
1/2 cup water or milk
salt & pepper to taste

Directions

I took about (3) medium potatoes, scrubbed them, popped them in the microwave for about (6) minutes…meanwhile turned the Ninja on stovetop medium with some olive oil.

After the potatoes were done (but not completely cooked) I cut them into nice big chunks and put in the ninja…they covered the bottom, but wasn’t crowded.

Took about 6-7 minutes for them to be nice and golden. I removed the potatoes…added (1) pound breakfast sausage…took about 5-6 minutes to brown.

While sausage was browning, I took (1) dozen eggs with a half cup water, salt and pepper to taste. (Could use milk, but my sister has a dairy allergy). Added potatoes back in pot, poured eggs over the sausage and potatoes.

Put lid on, switched to oven setting at 350 and took maybe 15-20 minutes to cook.

I served this with salsa, cheese, jalapeƱos, and sliced apple
