Ingredients

  • 1-3 LBS Pork Tenderloin or Boneless, Skinless Chicken Breast 1 large onion, chopped 2 Cans (4 OZ) Chiles, Chopped 2 Cans Diced Tomatoes (14.5oz Cans) 1 Can Rotel Tomatoes (10oz) OPTIONAL 2 Tsp Oregano 1 ½ tsp Garlic Powder ½ tsp Thyme 1 tsp Salt and Pepper 1 Can Whole Kernel Corn or Hominy (15.25 OZ) 2 -3 Cups water

Method

Step 1

Place Pork/Chicken and all ingredients except corn in slow cooker, add 2-3 cups water and cook on high 6-7 hours. Remove Pork/Chicken, shred and replace in slow cooker. Add corn and cook another 1-2 hours. Serve over rice, Fritos, etc. Garnish with cheese, sour cream, etc. *Note* We like this because it is so versatile. The original recipe called for pork, but we found we like the chicken just as well, if I have no pork on hand. We have tried it with the hominy, but we like the corn best. You can add hot sauce, red pepper flakes, jalapenos if this is not spicy enough for your taste or you can leave out the Rotel tomatoes if this is too spicy for you.
