Quinoa Stuffed Peppers

Ingredients
- 3 green peppers halved
- 2 cups cooked quinoa
- finely chopped carrots
- finely chopped onions
- finely chopped celery
- crushed garlic
- 1 can stewed or crushed tomatoes
- shredded cheese
Method
Step 1
Cook quinoa according to package directions. Add finely chopped carrots, finely chopped onions, crushed garlic (to taste), finely chopped celery, and a can of stewed tomatoes. Add little cheese. Cut peppers in half and filled with mix. Put about 1/2 inch water in Ninja pan, add peppers and cover with tin foil, bake oven settling at 350 until the peppers were soft. Quinoa is a complete protein so no need for meat but you can add hamburger or chicken if desired.
